Albacore Zucchini Cakes

  • 1 cup flaked canned or cooked Wild Pacific Albacore
  • Vegetable oil for frying
  • 3 cups shredded unpeeled zucchini
  • ½ cup shredded cheddar cheese
  • 3 tbsp. chopped parsley
  • 1 tsp. salt
  • 1 large clove garlic, finely chopped
  • 1 egg
  • ½ cup flour
  • ½ cup cornstarch
  • 2 tsp. baking powder
  • 1 tsp. salt
  • Black pepper to taste

Heat oil (½ inch) in 10-inch skillet to 375 degrees.

Mix albacore, zucchini, cheese, parsley, salt, garlic, and egg in a mixing bowl. Whisk the flour, cornstarch, baking powder, and salt together, then stir this into the other mixture. Add fresh-ground black pepper.

Drop by rounded spoonfuls into hot oil. Fry until golden brown, about 1 minute on each side. Drain.

Makes about 2 dozen cakes.
