CARIBBEAN-STYLE ALBACORE
1½ lbs. albacore loin cuts ½ cup plain yogurt
2 tbsp. orange marmalade
1 tbsp. lime juice
½ teaspoon curry powder
2 tbsp. olive oil
2 tbsp. lime juice
Pinch salt
Assorted fresh fruits
Rinse albacore in cold water and pat dry with paper towels. Set aside. Blend together yogurt, marmalade, 1 tbsp. lime juice, and curry powder. Chill 15 - 20 minutes. Combine the oil, 2 tbsp. lime juice, and salt. Baste albacore with the oil mixture, then grill over hot coals, basting with the oil mixture. Serve with curry-yogurt sauce. Garnish with assorted fresh fruit such as sliced strawberries, melon, and grapes. 4 servings
Optional: add 1 tbsp. finely-chopped peanuts and 1 tsp. finely chopped mint to yogurt sauce.
